
We've cut down big time on beef in our house in our continued attempt in getting healthier. Don't get me wrong, I will not pass up a beautiful steak!! To cut back a bit I have been subbing out ground turkey and chicken in place of ground beef in meatballs, meatloaf and burgers! Typically chicken burgers are bland and dry, not this one!!! I am so happy with the way these came out! I used lean ground chicken, roasted peppers, baby spinach and pesto!!!! Topped with fresh mozzarella and in place of a big roll, I used a whole grain sandwich thin.... this is a HUGE winner!!!!
makes 3 burgers
In a bowl mix together the chicken, spinach, roasted peppers, pesto, bread crumbs, salt and pepper.
Form into 3 equal sized patties.
Cook on a hot grill pan for about 5-6 mins per side, depending on thickness and temp of the grill (pan), or until the juices run clear. Top with fresh mozzarella and place a bowl overtop to allow the steam to melt the cheese.
