Season the pork chops on both sides with salt.
Heat the olive oil in a pan and (using tongs to make it easier), position the chops upright so that fat is in direct contact with the pan, crisping and rendering the fat first and foremost, before placing each pork chop flat on the pan.
Cook for 3-4 minutes on both sides until crispy and golden and sufficiently cooked through.
Once done, simply serve the pork chops with the applesauce and your choice of side salad.
